Are you vegan?

I’m not a fan of labels, but I’ll say I follow a vegan diet except for the occasional honey.

How long have you been vegan?

I changed my diet in 2014 and never looked back!

Did you always eat healthy food?

Not at all! My diet was far from healthy, especially while I was in College. Cinnamon buns and Brownie Bites from a vending machine were often my go-to dinner. I was a full-time student with a full-time job; a balanced diet was the least of my worries. It makes me cringe just to think about it!

Do you need to take any supplements on a plant-based diet?

Absolutely. I wasn't aware of this when I changed my diet.

About a year after, my blood tests came back low in vitamin D and B. Since then, I take B complex (includes all B vitamins, not only B12) and D3 vitamins daily. If you follow a vegan diet, be aware that some types of vitamin D are not vegan-friendly. Vitamin D2 is always suitable for vegans, but vitamin D3 can be derived from an animal source (such as sheep's wool). A vegan-friendly option is derived from lichen.

Is it difficult to follow a vegan diet?

Like any other change, it takes some time to get used to.

There’s definitely a period of adjustment where you’ll figure out your own pace. For example, eggs were the last thing I removed from my diet, for some people, I hear dairy is the hardest one to remove.

Once the transition period is over, it gets easier to adapt. Healthy eating slowly starts to become the norm, so much so that you won’t even crave anything other than healthy foods.

Do you have any advice for anyone transitioning to a vegan diet?

Honor your pace, be kind to yourself in the transition, listen to your body, and have fun in the kitchen!

Always remember that you’re unique and what works for one person may not work for someone else.

Is it expensive to follow a vegan diet?

Glad you asked! There’s a misconception, probably rooted in the cost of organic produce and superfoods, that eating healthy is expensive, but that couldn’t be further from the truth.

In most of my recipes, I do my best to share the cost of the main ingredients to show how affordable it is to eat healthy foods, especially when meal prepping. I can create lunch recipes for a week for under $10. That, of course, varies depending on where you live but overall, a vegan diet is affordable.

Where do you get inspiration for your recipes?

From every source I can get! From trips and traditional dishes to eating out locally and treating myself to something tasty on a Sunday.

After several years of eating plant-based, I have several great recipes up my sleeve and a much better understanding of how food works and what works best for my body.

I like to get creative and experiment with seasonal vegetables and adapt traditional dishes to vegan-friendly options that everyone can enjoy!
